Step 1 Preheat oven to 400ºF Place chicken in baking dish Season with Herb de Provence, salt & pepper
Step 2 Place chicken in oven Roast for 90-100 min, or until golden brown Insert thermometer into thickest part of chicken thigh to check temperature is 165ºF
Step 3 Heat large pan over medium heat; add 1 tbsp oil Add vegetables into pan Cook and stir for 10-12 min
Step 4 Remove thyme leaves from stem; add thyme, tomato paste, and splash of water into pan Cook and stir on low heat for 5 min (or until vegetables are tender); remove from heat
Step 5 Tear (or chop) basil leaves into small pieces; add basil, salt & pepper (to taste) into pan, & stir Plate and serve! Enjoy chicken with selected sauce
