Orecchiette

With sausage, broccoli rabe, and ricotta salata.

Step 1
Heat large pan over medium heat
Add 3 Tbsp oil; add sausage
Cook and stir sausage until both sides brown (1-2 min)

Step 2
Increase heat to medium high; add garlic oil
Cook and stir until garlic is golden (1-2 min)

Step 3
Add broccoli rabe, white wine, salt & pepper
Cook and stir for 1-2 min
Remove pan from heat

Step 4
Boil a large pot of lightly salted water
Cook orecchiette for 2 min; drain and reserve half a cup of pasta water
Add orecchiette & water to pan; stir for 1 min

Step 5
Add Parmigianored pepper flakes (to taste)
Toss until everything is well mixed
Plate; add ricotta cheese on top of dish
Serve and enjoy!
