Chicken and leek pie featuring rough puff pastry on top with a side of mashed potatoes. Just heat and eat - better than grandma's chicken pot pie!
Step 1 Preheat oven to 400º F Brush top of pie with egg yolk wash
Step 2 Sprinkle thyme and Malden sea salt on pie Bake for 25 min (or until golden brown) Leave pie in tin pie pan while baking
Step 3 Place mashed potatoes in microwave safe dish Microwave for 1-2 min Mix mashed potatoes (to spread heat & fluff up)
Step 4 Plate mashed potatoes off center and garnish with chives Remove pie from tin: loosen edges of tin and carefully flip onto a large spatula or small plate, remove tin & flip back onto plate next to the mashed potatoes Enjoy!
