Large Pan, Cooking Oil, Salt, Pepper

Pechuga Asada

Grilled chicken breast marinated in Mexican spices, served with Spanish rice and refried beans. Topped with a tomatillo, chile de arbol & chile guajillo cream sauce.

Step 1
Heat large pan over medium heat; add 1 tbsp oil
Place chicken gently into pan
Cook one side of chicken for 5-7 min

Step 2
Flip and cook other side for 4-5 min
Pour sauce over chicken; simmer for 1-2 min
Check to make sure chicken is cooked through
Remove chicken from pan and let rest on plate

Step 3
Place rice in microwaveable bowl
Dampen paper towel with water; place over rice
Microwave on high for 2 min

Step 4
Heat pan over medium heat
Add beans and splash of water
Cook and lightly stir for 3-5 min

Step 5
If desired, slice chicken into pieces
Plate, serve and enjoy!
